Description

Mashed Potato Pancakes are a delightful way to elevate leftover mashed potatoes into crispy, golden indulgences, perfect for any meal.


Ingredients

  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped chives or green onions
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 to 3 tablespoons vegetable oil or butter

Instructions

  1. In a large mixing bowl, combine the cold mashed potatoes, egg, flour, shredded cheese, chopped chives, garlic powder, salt, and pepper. Stir until well blended.
  2. Scoop about 2 tablespoons of the mixture and form it into patties, about 1/2 inch thick.
  3. Preheat a non-stick skillet over medium heat and add your oil or butter.
  4. Gently place the patties in the skillet, frying them for approximately 3 to 4 minutes on each side until golden brown and crispy.
  5. Transfer the pancakes onto a paper towel-lined plate to absorb excess oil.
  6. Repeat with the remaining mixture.
  7. Serve warm, alongside sour cream, fresh herbs, or your favorite dip.
