- 2 cups cold mashed potatoes
- 1 large egg
- 1/4 cup all-purpose flour
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped chives or green onions
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 2 to 3 tablespoons vegetable oil or butter
Instructions
- In a large mixing bowl, combine the cold mashed potatoes, egg, flour, shredded cheese, chopped chives, garlic powder, salt, and pepper. Stir until well blended.
- Scoop about 2 tablespoons of the mixture and form it into patties, about 1/2 inch thick.
- Preheat a non-stick skillet over medium heat and add your oil or butter.
- Gently place the patties in the skillet, frying them for approximately 3 to 4 minutes on each side until golden brown and crispy.
- Transfer the pancakes onto a paper towel-lined plate to absorb excess oil.
- Repeat with the remaining mixture.
- Serve warm, alongside sour cream, fresh herbs, or your favorite dip.
