- 2 1/2 cups All-Purpose Flour
- 1 tsp Granulated Sugar
- 1 tsp Salt
- 1 cup Unsalted Butter, very cold and cubed
- 1/2 cup Ice Water
- 1 tsp Apple Cider Vinegar (optional)
- 6–7 medium Apples (about 3 lbs), a mix of Honeycrisp and Granny Smith
- 1 tbsp Lemon Juice
- 1/2 cup Granulated Sugar (adjust to taste)
- 1/4 cup Brown Sugar, packed
- 2 tbsp All-Purpose Flour
- 1 1/2 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- Pinch of Ground Cloves (optional)
- 1/4 tsp Salt
- 2 tbsp Unsalted Butter, cut into small pieces
- 1 large Egg (for egg wash)
- 1 tbsp Milk or Water (for egg wash)
- Coarse Sugar (for sprinkling)
Instructions
- In a large bowl, whisk together 2 1/2 cups of all-purpose flour, 1 tsp of granulated sugar, and 1 tsp of salt for the pie crust.
- Add 1 cup of cold, cubed unsalted butter to the mixture; cut into the flour until it resembles coarse meal.
- In a small bowl, combine 1/2 cup of ice water and 1 tsp of apple cider vinegar. Gradually add this to the flour mixture until the dough comes together.
- Divide the dough in half, flatten each half into discs, wrap in plastic, and refrigerate for at least 1 hour.
- While the dough chills, peel, core, and slice 6-7 medium apples, tossing them with 1 tbsp of lemon juice.
- In a separate bowl, combine 1/2 cup of granulated sugar, 1/4 cup of packed brown sugar, 2 tbsp of all-purpose flour, 1 1/2 tsp of ground cinnamon, 1/4 tsp of ground nutmeg, a pinch of ground cloves (if using), and 1/4 tsp of salt. Mix this with the apples.
- Preheat your oven to 400°F (200°C).
- Roll out the bottom crust into a 12-inch circle and transfer it to a pie dish.
- Fill the crust with the apple mixture, dotting it with 2 tbsp of small pieces of butter.
- Roll out the top crust, seal and crimp the edges, then cut slits for ventilation.
- Brush the top with an egg wash made from 1 large egg mixed with 1 tbsp of milk or water, and sprinkle with coarse sugar.
- Bake the pie for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-40 minutes until golden and bubbling.
- Allow the pie to cool completely for 2-3 hours before slicing.
Notes
For a gourmet touch, add a teaspoon of vanilla extract to the apple mixture for depth and sweetness.
