Description

A classic dessert featuring a flaky crust and a sweet-tart apple filling, perfect for family gatherings.


Ingredients

  • 2 1/2 cups All-Purpose Flour
  • 1 tsp Granulated Sugar
  • 1 tsp Salt
  • 1 cup Unsalted Butter, very cold and cubed
  • 1/2 cup Ice Water
  • 1 tsp Apple Cider Vinegar (optional)
  • 67 medium Apples (about 3 lbs), a mix of Honeycrisp and Granny Smith
  • 1 tbsp Lemon Juice
  • 1/2 cup Granulated Sugar (adjust to taste)
  • 1/4 cup Brown Sugar, packed
  • 2 tbsp All-Purpose Flour
  • 1 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • Pinch of Ground Cloves (optional)
  • 1/4 tsp Salt
  • 2 tbsp Unsalted Butter, cut into small pieces
  • 1 large Egg (for egg wash)
  • 1 tbsp Milk or Water (for egg wash)
  • Coarse Sugar (for sprinkling)

Instructions

  1. In a large bowl, whisk together 2 1/2 cups of all-purpose flour, 1 tsp of granulated sugar, and 1 tsp of salt for the pie crust.
  2. Add 1 cup of cold, cubed unsalted butter to the mixture; cut into the flour until it resembles coarse meal.
  3. In a small bowl, combine 1/2 cup of ice water and 1 tsp of apple cider vinegar. Gradually add this to the flour mixture until the dough comes together.
  4. Divide the dough in half, flatten each half into discs, wrap in plastic, and refrigerate for at least 1 hour.
  5. While the dough chills, peel, core, and slice 6-7 medium apples, tossing them with 1 tbsp of lemon juice.
  6. In a separate bowl, combine 1/2 cup of granulated sugar, 1/4 cup of packed brown sugar, 2 tbsp of all-purpose flour, 1 1/2 tsp of ground cinnamon, 1/4 tsp of ground nutmeg, a pinch of ground cloves (if using), and 1/4 tsp of salt. Mix this with the apples.
  7. Preheat your oven to 400°F (200°C).
  8. Roll out the bottom crust into a 12-inch circle and transfer it to a pie dish.
  9. Fill the crust with the apple mixture, dotting it with 2 tbsp of small pieces of butter.
  10. Roll out the top crust, seal and crimp the edges, then cut slits for ventilation.
  11. Brush the top with an egg wash made from 1 large egg mixed with 1 tbsp of milk or water, and sprinkle with coarse sugar.
  12. Bake the pie for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-40 minutes until golden and bubbling.
  13. Allow the pie to cool completely for 2-3 hours before slicing.

Notes

For a gourmet touch, add a teaspoon of vanilla extract to the apple mixture for depth and sweetness.
