Description

A delightful salad combining tender chicken and vibrant basil pesto, perfect for any meal.


Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/3 cup fresh basil pesto
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1/4 cup finely chopped red onion
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup roasted pine nuts
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Mixed greens or lettuce leaves for serving

Instructions

  1. In a large mixing bowl, combine the shredded chicken, fresh basil pesto, Greek yogurt, and lemon juice. Stir until the chicken is lavishly coated.
  2. Add the chopped red onion, halved cherry tomatoes, and roasted pine nuts to the bowl. Gently toss to combine.
  3. Fold in the grated Parmesan cheese.
  4. Season with salt and pepper to taste.
  5. Serve on a bed of mixed greens or lettuce leaves.

Notes
