- 2 cups cooked chicken breast, shredded or chopped
- 1/3 cup fresh basil pesto
- 1/4 cup plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1/4 cup finely chopped red onion
- 1/2 cup cherry tomatoes, halved
- 1/4 cup roasted pine nuts
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Mixed greens or lettuce leaves for serving
Instructions
- In a large mixing bowl, combine the shredded chicken, fresh basil pesto, Greek yogurt, and lemon juice. Stir until the chicken is lavishly coated.
- Add the chopped red onion, halved cherry tomatoes, and roasted pine nuts to the bowl. Gently toss to combine.
- Fold in the grated Parmesan cheese.
- Season with salt and pepper to taste.
- Serve on a bed of mixed greens or lettuce leaves.
Notes
