- 1 1/2 pounds sirloin steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 pound baby potatoes, halved
- 6 tablespoons unsalted butter, divided
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- Fresh parsley, chopped (for garnish)
Instructions
- Season the steak cubes generously with salt and black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the steak cubes to the pan and sear until browned on all sides, about 3-4 minutes. Remove from the pan and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the halved potatoes, cooking until golden brown and tender, approximately 10-12 minutes.
- Reduce the heat and add 2 tablespoons of butter, garlic, thyme, rosemary, and oregano. Stir to coat the potatoes.
- Return the steak cubes to the skillet along with the remaining butter, tossing everything until well coated.
- Cook for an additional 2-3 minutes until heated through.
- Garnish with fresh parsley before serving.
Notes
For a healthier version, use lean cuts of beef, sweet potatoes, and incorporate greens like spinach.
