Description

A quick and flavorful Firecracker Chicken Stir Fry packed with vegetables and a spicy kick, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1-inch fresh ginger, grated
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon honey
  • 1 teaspoon chili garlic sauce (adjust for desired spice level)
  • 1/4 teaspoon red pepper flakes
  • Cooked rice or noodles for serving
  • Sliced scallions and sesame seeds, for garnish

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  3. In the same skillet, add onion, garlic, and ginger. Stir-fry for 1-2 minutes until fragrant.
  4. Add the sliced bell peppers and broccoli. Stir-fry for about 4 minutes until tender yet crisp.
  5. In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, honey, chili garlic sauce, and red pepper flakes.
  6. Return the chicken to the skillet, pour the sauce over, and stir well. Cook for another 2-3 minutes until the sauce thickens slightly.
  7. Serve hot over cooked rice or noodles, garnished with sliced scallions and sesame seeds.

Notes

You can adjust the spice level by modifying the amount of chili garlic sauce and red pepper flakes. Perfect for meal prep and can be stored for up to three months in the freezer.
