A delicious recipe for flavorful Elote Steak Tacos made with tender steak, zesty elote sauce, and customizable toppings.

- 1.5 lbs Flank Steak, skirt steak, or sirloin steak
- 2 tbsp Olive Oil
- 1 tbsp Chili Powder
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Cumin
- 1/4 tsp Cayenne Pepper (optional, for heat)
- Salt and Black Pepper to taste
- 4 ears of Corn, husks and silk removed
- 1/4 cup Mayonnaise
- 1/4 cup Mexican Crema or Sour Cream
- 1/4 cup Cotija Cheese, crumbled
- 2 tbsp Chopped Cilantro
- 1 Lime, juiced
- 1/4 tsp Chili Powder
- Salt and Black Pepper to taste
- 12 Corn or Flour Tortillas
- Optional Toppings: Avocado slices, pickled onions, hot sauce, extra cilantro
Instructions
- Marinate the Steak: Whisk together olive oil, chili powder, smoked paprika, garlic powder, onion powder, cumin, cayenne (if using), salt, and black pepper. Coat the steak in the marinade and refrigerate for at least 30 minutes.
- Prepare for Cooking: Remove the steak from the fridge 20-30 minutes before cooking and pat dry.
- Cook the Steak: Grill or skillet cook the steak for 3-5 minutes per side until medium-rare (130-135°F/54-57°C).
- Rest the Steak: Let the steak rest for 10 minutes before slicing thinly against the grain.
- Grill or Boil the Corn: Grill corn for 10-15 minutes or boil for 5-7 minutes until tender.
- Prepare the Elote Sauce: Mix mayonnaise, Mexican crema, cotija cheese, cilantro, lime juice, chili powder, salt, and black pepper until combined.
- Assemble the Elote: Coat cooked corn with elote sauce and garnish with extra cotija cheese and cilantro.
- Warm the Tortillas: Warm tortillas in a skillet or microwave.
- Assemble the Tacos: Fill tortillas with steak and top with elote.
- Add Toppings: Customize with optional toppings as desired.

For a lighter version, replace mayonnaise and crema with low-fat yogurt or avocado. Use coconut yogurt for a dairy-free option.
