- 2/3 cup granulated sugar
- 1/3 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder

- 1 cup colorful sprinkles
- 1 cup lemon curd or any desired filling
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry mixture to wet, mixing until just combined.
- Scoop dough (1 tablespoon each) and roll into balls, coating in sprinkles.
- Place on prepared baking sheet with space in between.
- Create a deep indent in the center of each cookie using your thumb.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool slightly, then fill indentations with lemon curd or desired filling.
- Allow cookies to cool completely on a wire rack before serving.
