Description

Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup colorful sprinkles
  • 1 cup lemon curd or any desired filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  5. In another bowl, whisk together flour, baking powder, and salt.
  6. Gradually add dry mixture to wet, mixing until just combined.
  7. Scoop dough (1 tablespoon each) and roll into balls, coating in sprinkles.
  8. Place on prepared baking sheet with space in between.
  9. Create a deep indent in the center of each cookie using your thumb.
  10. Bake for 10-12 minutes or until edges are lightly golden.
  11. Cool slightly, then fill indentations with lemon curd or desired filling.
  12. Allow cookies to cool completely on a wire rack before serving.
